Braise the Brisket
Pour in the beef broth and add smoked paprika and cumin. Bring to a simmer, then cover and reduce the heat to low. Cook for 3-4 hours, until the brisket is tender and easily shredded.

Thicken Queso
In a small bowl, mix cornstarch with a tablespoon of water to create a slurry. Stir this into the cheese mixture to thicken it, adding jalapeño to taste.
Assembling the Nachos

Layer the Chips
Spread a layer of tortilla chips on a large baking sheet or platter.

Evenly distribute the shredded brisket over the chips.

Pour Queso
Drizzle the queso blanco generously over the brisket and chips.

Add pico de gallo, pickled red onion, crema, guacamole, and crumbled cotija cheese on top of the nachos.
