Salad Preparation

Prepare the Romaine
Wash the romaine lettuce thoroughly under cold water, then dry it using a salad spinner or by patting it down with paper towels. Chop the lettuce into bite-sized pieces and place it in a large salad bowl.
Tortilla Croutons
- 2
Make Tortilla Croutons
Preheat your oven to 375°F (190°C). Cut the corn tortillas into small squares (about 1-inch in size). In a mixing bowl, toss the tortilla squares with olive oil, salt, and ground black pepper until evenly coated. Spread the tortilla pieces on a baking sheet in a single layer and bake for 10-12 minutes until crispy and golden brown. Remove from the oven and let cool.
Dressing and Assembly

Combine Ingredients
In the salad bowl with the romaine, add the Mexican Caesar dressing and toss gently to coat the lettuce evenly. Then, add the baked tortilla croutons and toss lightly again.

Add Toppings
Sprinkle the cotija cheese over the top of the salad, ensuring it's evenly distributed. Optionally, add more pepper or lime juice for extra flavor.
