Cooking Instructions
Prepare the Broth
In a large pot, combine chicken broth and shio tare. Bring to a gentle simmer and let cook for about 10 minutes.
Cook the Noodles
In a separate pot, bring water to a boil. Add the thin noodles and cook according to package instructions until al dente. Drain and set aside.
Prepare the Toppings
While the broth is simmering, prepare the toppings. Slice the pork chashu, soft-boil the eggs, and prepare the bamboo shoots and greens.
Assemble the Bowl
In a serving bowl, add a portion of the cooked noodles. Pour the hot broth over the noodles. Top with bamboo shoots, greens, sliced pork chashu, and a soft-boiled egg cut in half.
Finish with Yuzu
Drizzle yuzu juice over the toppings and sprinkle with yuzu peel. Add a sheet of nori on the side.
