Prepare the Filling
In a mixing bowl, combine ground pork, minced garlic, grated ginger, finely chopped green onions, chopped leeks, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Fill the Dumplings
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold it over to create a half-moon shape, and pinch the edges to seal. Repeat with the remaining wrappers and filling.
Boil the Dumplings
Bring a large pot of water to a boil. Carefully add the dumplings and cook for about 6-8 minutes, or until they float to the surface and are cooked through. Remove with a slotted spoon and set aside.
Serve
Serve the boiled dumplings hot, garnished with fried garlic chips and additional chopped scallions. Drizzle with extra soy sauce or a dipping sauce of your choice if desired.
