Method
Cheese Mousse Preparation
Prepare Gelatin
Soak gelatin sheets in cold water for about 5 minutes until soft. Squeeze out excess water.
Mix Cheese and Cream
In a bowl, beat the cream cheese with powdered sugar until smooth. Whip the heavy cream until soft peaks form, then fold into the cream cheese mixture.
Incorporate Gelatin
Melt the gelatin in a small saucepan over low heat. Stir in the red food coloring and mix well. Add this to the cheese mixture and gently fold until combined.
Chill
Pour the mousse into serving glasses and chill in the refrigerator for at least 2 hours until set.
Hazelnut & Chocolate Snow Preparation
Prepare Hazelnuts
Blend the hazelnuts in a food processor until finely ground.
Melt Chocolate
Melt the dark chocolate in a microwave or double boiler. Mix the ground hazelnuts and cocoa powder into the melted chocolate.
Cool and Crumble
Spread the mixture onto a baking sheet and let cool. Once set, crumble into snow-like pieces.
Strawberry Gel Preparation
Cook Strawberries
In a saucepan, combine fresh strawberries, sugar, and lemon juice. Cook over medium heat until strawberries soften.
Blend and Strain
Blend the mixture until smooth and strain to remove seeds.
Thicken with Agar-Agar
Return the strawberry liquid to the saucepan, add agar-agar, and bring to a boil. Stir for 2 minutes until thickened.
Set the Gel
Pour the mixture into a flat dish and let it cool in the refrigerator until set. Cut into cubes before serving.
