Prepare the Apples

Preheat the oven to 375°F (190°C). In a large bowl, combine the sliced apples with brown sugar, cinnamon, and vanilla extract. Toss until the apples are well coated.

Make the Brown Butter

In a saucepan over medium heat, melt the unsalted butter. Continue to cook, swirling the pan occasionally, until the butter turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.

Assemble the Cake

Roll out one sheet of puff pastry and place it in a greased 9-inch pie dish. Pour the apple mixture into the pastry crust, then drizzle the brown butter over the apples. Cover with the second sheet of puff pastry, sealing the edges.

Bake

Cut a few slits in the top pastry to allow steam to escape. Bake in the preheated oven for 35-40 minutes, or until the pastry is golden brown and the apples are tender.

Serve

Allow the cake to cool for a few minutes before serving warm with a scoop of sorbet on the side.
