Prepare the Dough
In a large bowl, dissolve the yeast and brown sugar in warm water. Let it sit for about 5 minutes until frothy. Stir in the flour and salt until combined. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Sticks
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 12 equal pieces. Roll each piece into a long rope, about 12 inches long. Shape into a pretzel or leave as sticks.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Carefully add the pretzel sticks to the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.

Bake in the preheated oven for 12-15 minutes or until golden brown.
