    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half and place them in a large bowl.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and let it drain on paper towels. Once cooled, chop it into small bits.

    Make the Vinaigrette

    In a small bowl, whisk together the balsamic vinegar, apple cider vinegar, olive oil, salt, and pepper.

    Combine Ingredients

    Add the bacon bits and vinaigrette to the Brussels sprouts. Toss until the Brussels sprouts are well coated.

    Roast the Brussels Sprouts

    Spread the Brussels sprouts mixture in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are tender and caramelized, stirring halfway through.
