Mushroom Filling

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the wild mushrooms, salt, and pepper. Cook until mushrooms are soft and browned, about 5-7 minutes. Remove from heat and let cool.

Truffle Cream

    Prepare the Truffle Cream

    In a small saucepan over low heat, combine heavy cream and truffle oil. Season with salt to taste. Allow it to warm gently without boiling. Remove from heat and set aside.

    Assemble the Tartufi

    Preheat the oven to 180°C (350°F). In a baking dish, layer the pasta sheets, followed by the sautéed mushroom mixture, a layer of grated fontina cheese, and a drizzle of truffle cream. Repeat the layers until all ingredients are used, finishing with a layer of pasta and truffle cream on top. Dot with butter.

    Bake the Tartufi

    Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly. Let it cool slightly before serving.

    Serve warm, garnished with shaved fresh truffle and chopped parsley.
