Preparation Steps

Prepare the Coffee
Brew 250 ml of strong espresso coffee and allow it to cool to room temperature.

Whisk Egg Yolks
In a mixing bowl, add 4 large egg yolks and 100 grams of granulated sugar. Whisk together until the mixture is pale and creamy.

Add Mascarpone and Vanilla
Gently fold in 500 grams of mascarpone cheese and 1 tsp of vanilla extract into the egg yolk mixture until smooth and well combined.

Incorporate Milk
Slowly add 100 ml of milk into the mascarpone mixture, stirring gently until fully incorporated and creamy.

Dip Ladyfingers
Quickly dip each ladyfinger cookie into the cooled espresso. Do not soak them; a quick dip on each side is enough to absorb the coffee.

Layer the Tiramisu
In a rectangular dish, layer half of the dipped ladyfingers on the bottom. Spread half of the mascarpone mixture evenly over the top. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.

Chill
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Serve
Before serving, dust the top with 30 grams of cocoa powder and garnish with 30 grams of grated dark chocolate.
