Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Prepare the Sauce
While the spaghetti is cooking, cut the pancetta into small cubes. In a bowl, beat the eggs and mix in the grated Parmesan cheese. Add a generous amount of black pepper.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

Combine Pasta and Sauce
Once the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the pasta. Add the hot spaghetti directly to the skillet with pancetta. Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Plate the spaghetti carbonara, garnishing with chopped fresh parsley and additional black pepper to taste. Serve immediately.
