Panna Cotta Base

Method

Panna Cotta Base

  1. 1

    Prepare Gelatin

In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes until it blooms.

  2. 2

    Heat Cream Mixture

In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring frequently until the sugar dissolves and the mixture is just about to boil.

  3. 3

    Combine Ingredients

Remove the saucepan from heat, and stir in the bloomed gelatin and vanilla extract until fully dissolved.

  4. 4

    Pour into Molds

Pour the mixture into individual ramekins or molds. Allow to cool for a bit at room temperature, then refrigerate for at least 4 hours or until set.

Mixed Berry Sauce

  1. 5

    Cook Berries

In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Stir gently and cook until the berries start to break down and the mixture thickens, about 10 minutes.

  2. 6

    Cool Sauce

Remove from heat and let the sauce cool to room temperature. You can mash the berries slightly for a smoother sauce if desired.

  3. 7

    Serve

Once the panna cotta has set, carefully unmold it onto plates and drizzle with the mixed berry sauce before serving.
