Salad Preparation

Prepare the Chicory
Rinse the chicory leaves under cold water to remove any dirt. Pat them dry with a clean kitchen towel and then chop them into bite-sized pieces.

Prepare the Orange
Peel the orange, removing all the white pith. Slice the orange into rounds and then cut each round into quarters.

Prepare the Olives
If using whole black olives, pit them if necessary and slice them in half. If using pre-sliced olives, simply measure out the required amount.

Prepare the Cheese
Grate the Pecorino Romano cheese using a grater or slice it thinly, as per your preference.

Make the Vinaigrette
In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, and honey. Season with salt and black pepper to taste.

In a large salad bowl, combine the prepared chicory, orange slices, black olives, and Pecorino Romano cheese.
