Base Preparation

    Combine Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until steaming but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour about half of the warm milk and cream mixture into the egg yolk mixture, whisking continuously to temper the yolks.

    Combine Mixtures

    Return the tempered egg mixture to the saucepan with the remaining milk and cream. Stir in the vanilla extract.

    Cook the Base

    Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 8-10 minutes).

    Chill the Base

    Remove from heat and let it cool slightly, then refrigerate for at least 4 hours or overnight until completely chilled.

Flavoring and Churning

    Prepare Flavor Additions

    For chocolate gelato, stir in chocolate syrup. For strawberry gelato, blend fresh strawberries into a puree and fold into the base. For pistachio gelato, fold in finely chopped pistachios.

    Churn the Gelato

    Pour the flavored gelato base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours until firm.
