Prepare the Blueberry Filling
In a medium bowl, combine the fresh blueberries, granulated sugar, cornstarch, and lemon juice. Gently toss until the blueberries are well-coated. Let the mixture sit for about 10 minutes to allow the blueberries to release their juices.

Make the Vanilla Sauce
In a small saucepan, combine the heavy cream and granulated sugar over medium heat. Stir until the sugar is dissolved. In a separate bowl, whisk the egg yolk. Gradually add a small amount of the warm cream mixture to the egg yolk to temper it, stirring constantly. Then, slowly whisk the egg yolk mixture back into the saucepan with the remaining cream. Cook on low heat until the sauce thickens slightly, about 5 minutes. Remove from heat and stir in the vanilla extract.

Assemble the Dessert
In individual serving dishes, spoon a layer of the blueberry filling. Drizzle the warm vanilla sauce over the blueberries. Repeat the layers if desired. Garnish with fresh mint leaves for a pop of color and flavor.
