Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned and sliced calamari with buttermilk. Let it marinate for at least 30 minutes.

Mix the Dry Ingredients
In another bowl, whisk together the flour, cornstarch, salt, black pepper, and paprika until well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Carefully place them in the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove and drain on paper towels.

Cook the Marinara Sauce
In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the crushed tomatoes, oregano, salt, and black pepper. Stir to combine, then let simmer for about 15 minutes. Stir in the chopped fresh basil before serving.
