Method

For the Calamari

  1. 1

    Prepare the Calamari

In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

  2. 2

    Coat the Calamari

Dredge the calamari rings in the flour mixture, ensuring they are well coated. Shake off excess flour.

  3. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Fry the Calamari

Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Do not overcrowd the pan.

  5. 5

    Drain and Serve

Remove the fried calamari from the oil and drain on paper towels. Serve immediately with lemon wedges.

For the Citrus Tomato Dipping Sauce

  1. 6

    Combine Ingredients

In a mixing bowl, combine the diced tomatoes, fresh orange juice, fresh lemon juice, olive oil, minced garlic, chopped basil, salt, and black pepper.

  2. 7

    Mix Well

Stir the sauce until all ingredients are well combined. Adjust seasoning to taste.

  3. 8

    Chill the Sauce

Let the dipping sauce sit in the refrigerator for at least 15 minutes before serving to enhance the flavors.
