Prepare the Dough

Boil the Liquid
In a medium saucepan, combine 1 cup of water, 1 tablespoon of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once the mixture is boiling, remove it from the heat and quickly stir in 1 cup of all-purpose flour until the dough is smooth and forms a ball.

Incorporate Eggs
Allow the dough to cool for about 5 minutes. Then, add 2 large eggs, one at a time, mixing well after each addition until fully incorporated.
Prepare the Cinnamon Sugar

Combine Sugar and Cinnamon
In a small bowl, mix together 1 cup of granulated sugar and 2 tablespoons of ground cinnamon until well combined. Set aside.
Fry the Churros

Heat the Oil
In a deep frying pan or pot, pour in 4 cups of vegetable oil and heat to 350°F (175°C).

Pipe the Dough
Transfer the dough to a piping bag fitted with a star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil, cutting them with scissors.

Fry Until Golden
Fry the churros in batches for 2-3 minutes, or until they are golden brown. Make sure not to overcrowd the pan.
