Mango-Pineapple Açaí Base

    Prep frozen fruit

    Measure out frozen mango and pineapple so they're ready. Break up frozen açaí packet if solid; let sit at room temperature 2–3 minutes to soften slightly for easier blending.

    Blend base

    In a high-speed blender, combine 1.5 cups frozen mango, 1 cup frozen pineapple, 2 oz açaí puree, and 1/2 cup banana (ripe). Add 120 ml unsweetened coconut milk, 1 tablespoon honey or agave, and 1 teaspoon fresh lime juice. Pulse several times to start breaking up fruit, then blend continuously until mixture is very thick, smooth, and spoonable. If the mixture is too thick for your blender, add an additional 1–2 tablespoons (15–30 ml) coconut milk at a time; avoid thinning to a pourable smoothie—aim for a soft-serve consistency.

    Check sweetness & texture

    Taste and adjust: add up to 1 more teaspoon honey/agave if you prefer sweeter, or a splash more lime for brightness. If you need more fruit body, add a tablespoon of frozen mango and re-blend. Once balanced, transfer the base to a chilled bowl and use immediately or freeze briefly (10–15 minutes) to firm before serving if desired.

Assembly & Toppings

    Portion açaí base

    Divide the mango-pineapple açaí base between two serving bowls (approx. 2 bowls). Use a spoon to smooth the surface into a shallow well for toppings.

    Arrange fruit toppings

    Top each bowl with 1/4 cup sliced strawberries and 1/4 cup sliced banana (reserve remaining slices for garnish or extra servings). Add 2 tablespoons toasted coconut flakes, 1.5 tablespoons granola, and 1/2 teaspoon chia seeds per bowl. If using fresh mango and pineapple tidbits, scatter 2 tablespoons of each over each bowl for extra tropical texture.

    Finish & serve

    Garnish with an extra small drizzle of honey or a few extra coconut flakes if desired. Serve immediately with a spoon. If preparing ahead, store the blended base in an airtight container in the freezer for up to 24 hours; thaw in the fridge 20–30 minutes and stir to restore spoonable texture before assembling.
