Prepare Pan and Dry Ingredients

Line pan and measure
Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving an overhang on two sides to lift the tray out easily. Measure and place the rolled oats, salt, cinnamon, chia seeds, flaxseed meal, and dried cranberries (if using) in a large mixing bowl and stir briefly to combine.
Warm Wet Ingredients

Gently melt peanut butter and honey
Place the peanut butter and honey in a small, microwave-safe bowl. Microwave in 20-second bursts, stirring between each burst, until the mixture is loose and pourable (about 30–60 seconds total depending on your microwave). Alternatively, warm them together in a small saucepan over low heat, stirring, until combined and slightly thinned (do not boil). Remove from heat and stir in the vanilla extract.
Combine and Mix

Pour the warm peanut butter–honey mixture over the oats and dry ingredients. Using a sturdy spatula or wooden spoon, fold and press the mixture until the oats are evenly coated and a sticky, cohesive mixture forms. Work quickly while the mixture is warm so it binds well. If the mixture seems too crumbly, add 1–2 tablespoons of warm water or an extra tablespoon of honey; if too sticky, add 2–4 tablespoons more oats.
Add Chocolate Chips and Optional Mix-ins

Allow the mixture to cool for 2–3 minutes so the chocolate chips won't fully melt, then fold in 3/4 cup of the chocolate chips (reserve 1/4 cup for the top). Fold in any optional mix-ins (coconut, dried fruit) at this stage so they are evenly distributed.
Press into Pan and Chill

Transfer the mixture to the prepared pan. Use the back of a spatula or the bottom of a measuring cup (lined with parchment or plastic wrap) to press the mixture firmly and evenly into the pan—this ensures the bites hold together. Sprinkle the reserved 1/4 cup chocolate chips and optional shredded coconut on top, gently pressing them into the surface. Cover the pan with plastic wrap or a lid and refrigerate for at least 1 hour to firm up (30 minutes in the freezer works if you're short on time).
Slice and Store

Lift the set mixture from the pan using the parchment overhang. Place on a cutting board and slice into 16 equal squares (for bite size) or 24 smaller bites. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months. If frozen, thaw a few minutes at room temperature before eating.
