Method

Cucumber & Mint Infusion

    Prepare cucumber

    Wash the cucumber thoroughly. Using a mandoline or sharp knife, thinly slice the cucumber into rounds (about 1/8" thick). If you prefer stronger flavor, peel in alternating strips before slicing to expose more flesh.

    Bruise the mint

    Rinse the mint leaves and pat dry. Gently clap or bruise the leaves between your palms or crush lightly with the back of a spoon to release oils—do not fully pulverize.

    Assemble infusion

    In a 2–2.5 liter pitcher or beverage dispenser, add the cucumber slices and bruised mint leaves. If using the optional half lemon for brightness, thinly slice it and add the slices as well.

    Add water and sweetener

    Pour 2 liters of cold filtered water over the ingredients. If you want a touch of sweetness, dissolve 1 tsp honey or agave in a tablespoon of warm water and stir it into the pitcher until combined.

    Steep

    Cover and refrigerate for at least 1 hour for a light infusion or up to 4 hours for a more pronounced flavor. Do not steep more than 12 hours to avoid vegetal bitterness.

    Serve

    Before serving, add ice cubes to the pitcher or to individual glasses. Stir gently and pour into glasses, straining out large pieces if desired. Garnish with a small sprig of mint and a cucumber slice per glass.

Lemon & Strawberry Infusion

    Prepare strawberries

    Rinse strawberries, hull and slice them into halves or quarters depending on size. Lightly muddle half of the prepared strawberries in a bowl or in the bottom of the pitcher with the back of a spoon to release juices (avoid turning into puree).

    Prepare lemon

    Wash the lemon and slice into thin rounds or half-moons. If you prefer less bitterness, remove seeds and optionally peel a thin strip of zest for extra aroma and add separately.

    Add herbs (optional)

    If using basil or mint, rinse and gently bruise 6 leaves to release oils, then add to the pitcher.

    Assemble infusion

    Place the sliced and muddled strawberries and lemon slices into a 2–2.5 liter pitcher or beverage dispenser along with the bruised herbs if using.

    Add water and sweetener

    Pour 2 liters of cold filtered water over the fruit and herbs. If you prefer sweetness, dissolve 1 tsp simple syrup or honey in a tablespoon of warm water and stir into the pitcher.

    Steep

    Cover and refrigerate for at least 30 minutes for a light hint of flavor, 1–3 hours for stronger flavor. Avoid steeping longer than 12 hours to prevent breakdown and off flavors.

    Serve

    Add ice cubes to the pitcher or glasses. Stir gently and pour into glasses, straining if you prefer a clearer beverage. Garnish each glass with a strawberry slice and a lemon wheel or herb sprig.
