    Peel and shred the potatoes using a box grater or food processor. Rinse the shredded potatoes in cold water to remove excess starch, then drain and press them dry with a clean kitchen towel.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

    Combine Ingredients

    In a large bowl, mix the shredded potatoes with the cooked onions, salt, black pepper, paprika, and garlic powder. Stir until well combined.

    Cook the Hashbrowns

    Heat the remaining 2 tablespoons of olive oil in the same skillet over medium-high heat. Once hot, add the potato mixture, pressing it down into an even layer. Cook for about 5-7 minutes until the bottom is golden brown. Flip the hashbrowns carefully and cook for another 5-7 minutes until the other side is golden and crispy.
