Prepare the Duck Quarters
Season the duck quarters with salt, black pepper, minced garlic, and fresh thyme. Let them marinate for at least 30 minutes.

Sear the Duck
Heat the vegetable oil in a large skillet over medium-high heat. Place the duck quarters skin-side down and sear until the skin is crispy and golden brown, about 6-8 minutes. Flip and cook for another 4-5 minutes. Remove from the skillet and set aside.

Braised Cabbage
In the same skillet, add the chopped cabbage and sauté for 2-3 minutes. Add the apple cider vinegar and sugar, stirring to combine. Place the duck quarters on top of the cabbage, cover, and reduce heat to low. Cook for about 40 minutes until the duck is cooked through and the cabbage is tender.

Prepare the Cherry Sauce
In a small saucepan, combine the cherries and chicken stock. Bring to a simmer and cook for 10-15 minutes until the sauce has thickened. Blend if desired for a smoother texture.

Plate the braised cabbage and top with a duck quarter. Drizzle with the cherry sauce and serve warm.
