Soak the Potato Slices
Place the potato slices in a large bowl of cold water. Allow them to soak for at least 30 minutes. This step helps to remove excess starch, making the chips crispier.

Dry the Potato Slices
After soaking, drain the potato slices and lay them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove as much moisture as possible.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Use a deep-fry thermometer to monitor the temperature, bringing it to 350°F (175°C).

Fry the Potato Slices
Once the oil is hot, carefully add a handful of potato slices to the pot, ensuring not to overcrowd. Fry them in batches, cooking for about 3-5 minutes or until they turn golden brown and crispy.

Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt and pepper to taste while they are still hot.
