Mushroom Preparation

  1. 1

  2. 2

    Coat the Mushrooms

Place the Portobello mushrooms in the marinade and ensure they are evenly coated. Allow them to marinate for at least 30 minutes.

Preheat a grill or grill pan over medium-high heat. Grill the marinated mushrooms for about 5-7 minutes on each side, or until tender and charred.

    Prep the Vegetables

While the mushrooms are grilling, slice the avocado and tomato. Set aside.

  2. 5

    Toast the Ciabatta

  3. 6

    Assemble the Sandwich

Spread 1 tablespoon of spicy aioli on each slice of ciabatta. Layer the grilled Portobello mushrooms, avocado slices, mixed greens, tomato, and pickled red onions on the bottom slice. Top with the other slice of ciabatta.
