Prepare the Filling

Combine the Filling Ingredients
In a large bowl, combine the pulled jerk chicken, julienned carrot, sliced red onion, black beans, and Abby's sauce. Mix well until all ingredients are evenly coated.
Assemble the Spring Rolls

Prepare the Wrappers
Fill a shallow dish with water. Dip one spring roll wrapper into the water for a few seconds until it softens. Place it on a clean surface.

Fill the Wrapper
Spoon about 2-3 tablespoons of the filling onto the lower third of the wrapper.

Roll the Wrapper
Fold the sides of the wrapper over the filling, then roll it tightly from the bottom up to the top. Seal the edge with a little water.
Cook the Spring Rolls

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat.

Fry the Spring Rolls
Carefully place the spring rolls seam side down in the hot oil. Fry for about 2-3 minutes on each side until golden brown and crispy.
