Prepare the Onions
Slice the onion into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion slices and sauté until they are soft and caramelized, about 8-10 minutes. Stir occasionally to avoid burning.

Prepare the Tomatoes
While the onions are cooking, wash the tomato and slice it into thin rounds. Set aside.

Prepare the Lettuce
Wash and drain the lettuce leaves. Tear them into smaller pieces if necessary.
Assembly

Assemble the Sandwich
Take the Italian hoagie rolls and slice them open lengthwise. Layer the deli meats evenly on the bottom half of each roll. Top with the sautéed onions, followed by the provolone cheese slices, and finally the lettuce and tomato slices.

Drizzle the remaining tablespoon of olive oil over the sandwich fillings and sprinkle with salt and black pepper to taste.
