Caramelize the Onion
Slice the onion thinly. In a medium skillet over medium heat, add a tablespoon of oil. Once hot, add the sliced onion and sauté for about 10-12 minutes until they become soft and caramelized. Stir occasionally to prevent burning. Remove from heat and set aside.

Prepare the Meat
In the same skillet, add another tablespoon of oil if needed and raise the heat to medium-high. Add the ground duck or beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

Add Sauces
Once the meat is browned, stir in the chipotle and adobo sauces. Mix well and reduce heat to low, cooking for an additional 5 minutes, allowing the meat to absorb the flavors.

Dice the Tomato
While the meat is cooking, dice the tomato and chop the cilantro.

Layer the Nachos
On a large serving platter, spread a layer of tortilla chips evenly. Top with the sautéed meat mixture, caramelized onions, diced tomatoes, and crumbled goat cheese.

Sprinkle chopped cilantro over the top and dollop sour cream as desired.
