Turkey Preparation

Roasting the Turkey
Preheat your oven to 325°F (165°C). Rub the whole turkey with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder. Place the turkey in a roasting pan and pour in the chicken broth.

Cooking the Turkey
Cover the turkey with aluminum foil and roast in the oven for approximately 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Remove the foil in the last 30 minutes to allow the skin to brown.

Shredding the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes. Then, hand-pull the turkey meat into bite-sized pieces, discarding the skin and bones.

Mixing the Coleslaw
In a large bowl, combine the shredded cabbage and carrots. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrots mixture. Toss to coat evenly. Let the coleslaw sit for at least 15 minutes to allow the flavors to meld.

Building the Sandwich
Slice the sub rolls in half and layer with hand-pulled turkey, a slice of provolone cheese, a generous scoop of coleslaw, and a drizzle of Russian dressing. Top with a smear of mayonnaise if desired.
