    Slice the Chicken

    Thinly slice the grilled chicken breast into strips.

    Prepare the Vegetables

    Slice the mushrooms, onions, and peppers thinly. Set aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced onions and mushrooms. Sauté for about 5-7 minutes until softened.

    Add Peppers

    Add hot and sweet peppers to the skillet. Season with salt and black pepper. Cook for an additional 3-4 minutes.

    Combine Chicken

    Add the thinly sliced grilled chicken to the skillet. Stir to combine with the vegetables and heat for another 3-4 minutes.

    Melt the Cheese

    Place the provolone cheese slices over the chicken and vegetable mixture. Cover the skillet with a lid and let it cook for about 2-3 minutes until the cheese has melted.

Assembly

    Prepare the Hoagie Rolls

    Slice the hoagie rolls lengthwise, being careful not to cut all the way through.

    Spoon the chicken and vegetable mixture onto each hoagie roll, generously filling each one.
