Method
Preparation of Chicken
- 1
Marinate the Chicken
In a bowl, combine the olive oil, balsamic vinegar, garlic powder, salt, and black pepper. Place the chicken breasts in the marinade and ensure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
- 2
Grill the Chicken
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F/75°C). Remove from the grill and let it rest for 5 minutes before slicing into strips.
Assembly of Salad
- 3
Prepare the Salad Base
In a large serving tray or bowl, add the mixed salad greens as the base. Spread them evenly across the tray.
- 4
Add Chicken
Evenly distribute the grilled chicken strips over the mixed greens.
- 5
Top with Cheese and Nuts
Sprinkle the crumbled gorgonzola cheese and glazed cranberry walnuts over the chicken and greens.
Finishing Touch
- 6
Drizzle with Dressing
Just before serving, drizzle the balsamic dressing over the entire tray to add flavor.
- 7
Serve
Toss the salad gently before serving to combine the ingredients or serve as is for a layered effect.
