Marinate the Lamb
In a bowl, mix olive oil, minced garlic, chopped mint, lemon juice, salt, and black pepper. Rub the mixture all over the rack of lamb. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Lamb
Place the marinated rack of lamb in a roasting pan, bone side down. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Rest and Slice
Remove the lamb from the oven and let it rest for about 10 minutes. Slice between the bones into chops.
