For the Calamari

Preparing the Marinara Sauce

Sauté the Garlic

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Tomatoes and Spices

Stir in the crushed tomatoes, oregano, basil, salt, black pepper, sugar, and red pepper flakes. Bring the sauce to a simmer.

Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.

Preparing the Calamari

Prepare the Breading Mixture

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Prepare the Egg Mixture

In another bowl, whisk together the eggs and milk until well combined.

Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari

Dip the calamari rings first into the egg mixture, allowing excess to drip off, then coat them in the flour mixture.

Fry the Calamari

Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari

Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil.
