Wings

Method

Preparing the Wings

1

Preheat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

2

Season the Wings

While the oil is heating, rinse the chicken wings under cold water and pat them dry with paper towels. In a large bowl, combine salt, black pepper, garlic powder, and cayenne pepper. Toss the wings in the seasoning until evenly coated.

3

Fry the Wings

Carefully lower the seasoned wings into the hot oil in batches, being cautious not to overcrowd the pot. Fry the wings for about 10-12 minutes or until they are golden brown and crispy.

4

Drain and Toss in Sauce

Once cooked, use a slotted spoon to remove the wings from the oil and transfer them to a paper towel-lined plate to drain. In a separate bowl, melt the butter and mix with the hot sauce. Toss the hot wings in the sauce until evenly coated.

Making the Blue Cheese Dressing

5

Combine Ingredients

In a medium bowl, crumble the blue cheese with a fork. Add the mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper. Mix until well combined and creamy.

6

Chill the Dressing

Cover the bowl with plastic wrap and refrigerate the dressing for at least 30 minutes to allow the flavors to meld together.

Serving

7

Plate the Wings

Serve the spicy buffalo wings hot, with the chilled blue cheese dressing on the side for dipping.
