After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

In a large pot, heat the vegetable oil over medium heat. Once hot, add the dried potato strips in batches and fry for about 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Slowly add the cold sparkling water and whisk until smooth.

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip each fish fillet into the batter, ensuring it's fully coated.

Carefully place the battered fish fillets into the hot oil and fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the pre-cooked chips in batches for an additional 3-5 minutes until they are golden and crispy. Drain on paper towels and season with salt.
