Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This will ensure that the cakes are baked perfectly.
- 2
Cake Making
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- 4
Mix Eggs and Sugar
In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until thick and pale, about 2-3 minutes.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to combine.
- 6
Add Dry Ingredients
Gently fold in the flour, vanilla extract, and a pinch of salt until just combined. Do not overmix.
- 7
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.
Baking
- 8
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
- 9
Rest the Cakes
Remove from the oven and let the cakes rest for 1 minute. This will help them hold their shape when inverted.
