Make the Béchamel Sauce

In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until it forms a paste. Gradually add the milk, whisking until smooth. Continue to cook for about 5 minutes until thickened. Season with nutmeg, salt, and pepper.

Assemble the Croque Madame

Preheat your oven to 400°F (200°C). On a slice of sourdough, layer smoked ham, a slice of Swiss cheese, and a generous spoonful of béchamel sauce. Top with another slice of sourdough. Spread a little butter on the outside of the sandwich. Repeat with the remaining ingredients.

Grill the Sandwiches

In a skillet over medium heat, grill the sandwiches for about 3-4 minutes on each side until golden brown and the cheese is melted. Transfer to a baking sheet and place in the oven for an additional 5 minutes.

Fry the Eggs

In the same skillet, add a little more butter and fry the eggs to your desired doneness.

Serve

Place each sandwich on a plate, top with a fried egg, and serve with brunch potatoes on the side.
