Preheat the oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

Prepare the Crust

In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the sour cream, vanilla extract, and mix until fully incorporated. Add the eggs one at a time, mixing on low speed until just combined.

Make the Filling

Pour the filling over the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Bake the Cheesecake

After cooling, refrigerate the cheesecake for at least 4 hours or overnight. Once chilled, top with fresh berries before serving.
