Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool.

Prepare the Filling

    Dice the Tuna

    Cut the yellowfin tuna into small cubes, about 1/4 inch. In a mixing bowl, combine the tuna with the wasabi tobiko and eel sauce. Mix well.

Make Sriracha Aioli

    Combine Ingredients

    In a small bowl, whisk together the mayonnaise and sriracha until smooth. Adjust the sriracha to taste.

Form and Fry Sushi Tots

    Shape the Tots

    Once the sushi rice is cooled, take a small amount (about 2 tablespoons) and flatten it in your palm. Place a spoonful of the tuna filling in the center, then fold the rice around the filling to form a ball. Repeat with remaining rice and filling.

    Prepare for Frying

    Set up a breading station with three shallow bowls: one with flour, one with the beaten egg, and one with panko breadcrumbs.

    Bread the Tots

    Roll each sushi ball in flour, dip it in the egg, and then coat it in panko breadcrumbs. Ensure they are fully covered.

    Fry the Tots

    In a deep pan or pot, heat vegetable oil over medium-high heat. Once hot, fry the sushi tots in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve

    Serve the fried sushi tots on a plate, garnished with strips of nori and a drizzle of sriracha aioli. Enjoy!
