Prepare the Steak

Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

Season the Steak

Generously season both sides of the ribeye steak with salt and black pepper.

Sear the Steak

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the ribeye steak to the skillet and sear for 4-5 minutes on each side until a brown crust forms.

Add Aromatics

In the last minute of cooking, add the garlic cloves and rosemary to the skillet to infuse flavor into the steak.

Rest the Steak

Remove the steak from the skillet and let it rest for at least 10 minutes before slicing.

Whipped Potatoes

Boil the Potatoes

Peel and cube the russet potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

Drain and Mash

Drain the potatoes and return them to the pot. Add the butter and begin to mash until smooth.

Add Cream and Seasoning

Pour in the heavy cream, and season with salt and black pepper. Mix until fully combined and creamy.
