Crème Brûlée

    Prepare the Vanilla Bean Mixture

    In a saucepan, combine 2 cups of heavy cream and the vanilla bean (split lengthwise). Heat over medium heat until just simmering, then remove from heat and let steep for 15 minutes.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together 5 egg yolks, 1 cup of granulated sugar, and a pinch of salt until pale and slightly thickened.

    Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the yolks.

    Bake the Custard

    Preheat the oven to 325°F (160°C). Pour the custard into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes until set but still slightly jiggly in the center.

    Cool and Refrigerate

    Remove from the oven and let cool. Once cooled, refrigerate for at least 2 hours or until ready to serve.

    Caramelize the Sugar

    Before serving, sprinkle 1 tablespoon of granulated sugar evenly over each custard. Use a kitchen torch to caramelize the sugar until golden and crispy.

Chantilly Cream

    Whip the Cream

    In a mixing bowl, combine 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, whip until soft peaks form.

Buttery Shortbread Cookies

    Cream Butter and Sugar

    In a large bowl, beat 1 cup of unsalted butter and 2/3 cup of granulated sugar until light and fluffy.

    Add Vanilla and Flour

    Mix in 1 teaspoon of vanilla extract. Gradually add 2 cups of all-purpose flour and 1 teaspoon of salt, mixing until just combined.

    Shape and Bake Cookies

    Preheat the oven to 350°F (175°C). Roll the dough into balls and place them on a baking sheet. Flatten slightly and bake for 12-15 minutes until the edges are lightly golden.

    Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

    Wash and slice 2 cups of fresh strawberries. Set aside for assembly.
