Crust

    Prepare the Crust

    In a mixing bowl, combine graham cracker crumbs, melted butter, finely chopped pistachios, and granulated sugar. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool.

Cheesecake Filling

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar and continue to beat until well blended.

    Add Other Ingredients

    Add sour cream, eggs (one at a time), orange liqueur, orange zest, and vanilla extract. Mix on low speed until just combined, being careful not to overmix.

    Pour into Crust

    Pour the cheesecake filling into the cooled crust and smooth the top with a spatula.

    Bake the Cheesecake

    Bake at 325°F (160°C) for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Remove from the oven, allow to cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Pistachio Brittle

    Make the Brittle

    In a medium saucepan, combine granulated sugar and water. Cook over medium heat, stirring until sugar dissolves.

    Add Butter and Pistachios

    Once the mixture turns a golden amber color, remove from heat and stir in unsalted butter, salt, and chopped pistachios. Pour the mixture onto a greased baking sheet and spread into an even layer.

    Let the brittle cool completely before breaking it into pieces or ribbons.

Chantilly Cream

    Whip the Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

Assembly and Garnish

    Assemble the Cheesecake

    Remove the cheesecake from the springform pan. Top with Chantilly cream and arrange fresh raspberries on top.

    Decorate with Brittle

    Garnish with pieces or ribbons of pistachio brittle for added crunch and flavor.
