Chiffon Cake Preparation

Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, baking powder, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Fold in Egg Whites
Gently fold the whipped egg whites into the batter until no streaks remain.

Pour the batter into the prepared tube pan and bake for 50-60 minutes or until a toothpick comes out clean.

Whip Cream
In a medium bowl, whip the heavy cream until soft peaks form.

Add Sugar and Zest
Gradually add the powdered sugar and key lime zest, continuing to whip until stiff peaks form.

Spread Cream
Spread the key lime cream over the top of the soaked cake.
Mezcal Pineapple Sauce

Cook Pineapple
In a saucepan over medium heat, combine the diced pineapple, mezcal, brown sugar, and lime juice.

Simmer
Cook for about 10-15 minutes until the pineapple is soft and the sauce has thickened. Remove from heat and let cool slightly.
Graham Cracker Topping

Sprinkle on Cake
Sprinkle the graham cracker mixture over the top of the key lime cream.
Garnish

Prepare Garnish
Sprinkle lime zest over the cake and add seasonal berries on top for garnish.
