Chiffon Cake Preparation

    Preheat and Prepare

    Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan.

    Mix Dry Ingredients

    In a large bowl, sift together the flour, sugar, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the vegetable oil, egg yolks, water, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Whip Egg Whites

    In a clean bowl, beat the egg whites and cream of tartar until stiff peaks form.

    Fold in Egg Whites

    Gently fold the whipped egg whites into the batter until no streaks remain.

    Bake

    Pour the batter into the prepared tube pan and bake for 50-60 minutes or until a toothpick comes out clean.

    Cool

    Cool the cake upside down in the pan for about 1 hour, then remove it from the pan.

Three Milks Mixture

    Combine Milks

    In a bowl, mix together the sweetened condensed milk, evaporated milk, whole milk, and key lime juice.

    Soak Cake

    Once the cake has cooled, poke holes all over the top with a skewer and pour the milk mixture over the cake, allowing it to soak in.

Key Lime Cream

    Whip Cream

    In a medium bowl, whip the heavy cream until soft peaks form.

    Add Sugar and Zest

    Gradually add the powdered sugar and key lime zest, continuing to whip until stiff peaks form.

    Spread Cream

    Spread the key lime cream over the top of the soaked cake.

Mezcal Pineapple Sauce

    Cook Pineapple

    In a saucepan over medium heat, combine the diced pineapple, mezcal, brown sugar, and lime juice.

    Simmer

    Cook for about 10-15 minutes until the pineapple is soft and the sauce has thickened. Remove from heat and let cool slightly.

Graham Cracker Topping

    Mix Topping

    In a bowl, combine the graham cracker crumbs and melted butter until well mixed.

    Sprinkle on Cake

    Sprinkle the graham cracker mixture over the top of the key lime cream.

Garnish

    Prepare Garnish

    Sprinkle lime zest over the cake and add seasonal berries on top for garnish.
