Method
Cake
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 6-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- 3
- 4
Combine Mixtures
Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.
- 5
Bake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- 6
Cool
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Hazelnut Ganache
- 7
Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- 8
Combine with Chocolate
Remove from heat and add the chopped dark chocolate and hazelnut spread. Stir until smooth and fully combined.
- 9
Cool Ganache
Let the ganache cool at room temperature until it thickens slightly, about 30 minutes.
Dark Chocolate Buttercream
- 10
Beat Butter
In a mixing bowl, beat the softened unsalted butter until creamy.
- 11
Add Sugar and Cocoa
Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
- 12
Add Cream and Vanilla
Add the heavy cream and vanilla extract and beat on high speed until the buttercream is fluffy and spreadable.
Dark Chocolate Hazelnut Coating
- 13
Melt Chocolate
Melt the dark chocolate in a microwave or double boiler until smooth.
- 14
Combine with Hazelnuts
Stir in the chopped hazelnuts until well coated.
Assembly and Serving
- 15
Layer Cakes
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of hazelnut ganache on top.
- 16
Add Second Layer
Place the second cake layer on top and frost the entire cake with the dark chocolate buttercream.
- 17
Coat with Hazelnut Mixture
Carefully coat the sides and top of the cake with the dark chocolate hazelnut mixture.
- 18
Serve with Gelato
Serve slices of the cake with scoops of vanilla gelato and a sprinkle of hazelnut praline.
