Cooking the Pasta

Boil Water and Cook Pasta
In a large pot, bring salted water to a boil. Add the tagliolini and cook according to package instructions until al dente, usually about 3-4 minutes. Reserve 1 cup of pasta water before draining.
Preparing the Sauce

Mix Cheese and Pepper
In a large mixing bowl, combine the grated manchego cheese and cracked black pepper. Set aside.

Combine Pasta and Cheese Mixture
Once the pasta is cooked and drained, immediately add it to the bowl with the cheese and pepper mixture. Toss well to ensure the cheese begins to melt and coat the pasta. If the mixture is too dry, add reserved pasta water a little at a time until you achieve a creamy consistency.

Plate the Dish
Divide the pasta among plates. Top each serving with pieces of burrata cheese and drizzle with truffle oil. Finish with extra cracked black pepper to taste.
