Lamb Burger

    Prepare the Lamb Patty

    In a bowl, combine the ground lamb, minced garlic, chopped rosemary, salt, and black pepper. Mix until well combined, but do not overwork the meat.

    Form the Patties

    Divide the mixture into four equal portions and shape each portion into a patty. Make a slight indentation in the center to prevent puffing during cooking.

    Cook the Patties

    Heat olive oil in a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

Red Onion Marmalade

    Sauté Onions

    In a saucepan, heat olive oil over medium heat. Add the sliced red onions and a pinch of salt. Cook until the onions become soft and translucent, about 10 minutes.

    Add Sugar and Vinegar

    Stir in the brown sugar and balsamic vinegar. Cook for an additional 15-20 minutes, stirring occasionally, until the mixture is thick and syrupy.

Gorgonzola Fondue

    Heat Cream

    In a small saucepan over low heat, combine the heavy cream and minced garlic. Warm gently, but do not bring to a boil.

    Melt the Cheese

    Add the crumbled Gorgonzola cheese to the cream mixture, stirring continuously until the cheese is fully melted and the sauce is smooth. Season with black pepper to taste.

Secret Sauce

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, ketchup, Dijon mustard, garlic powder, and salt. Mix well until all ingredients are fully incorporated.

Assembly

    Assemble the Burger

    On the bottom half of each brioche bun, place a lamb patty, followed by a generous spoonful of red onion marmalade, a handful of arugula, and a drizzle of secret sauce. Top with the other half of the bun.

    Serve with Fries

    Serve the assembled lamb burgers with hand-cut fries on the side.
