Prepare the Pork
In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Pour the apple cider vinegar over the mixture.

Cook
Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.

Shred and Mix
Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in the BBQ sauce and let it sit for a few minutes.
Slaw

Make the Slaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well and refrigerate until ready to serve.

Assemble the Sandwich
To assemble, place a generous portion of the pulled pork on the bottom half of the brioche bun, top with slaw, and spread mayo on the top half. Close the sandwich and serve.
