Method

Preparation

  1. 1

    Cutting Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create the frites.

  2. 2

    Soaking Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

Frying

  1. 3

    Heating Oil

In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the frites.

  2. 4

    Frying Frites

Drain and pat dry the soaked potatoes. Carefully add a batch of the frites to the hot oil, ensuring not to overcrowd the pot. Fry for about 5-7 minutes until golden brown.

  3. 5

    Draining Oil

Use a slotted spoon to remove the frites from the oil and place them on a paper towel-lined plate to drain excess oil.

  4. 6

    Seasoning

While the frites are still hot, sprinkle with salt and black pepper to taste.
