Preparation
- 1
Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
- 2
Prepare the Black Beans
Drain and rinse the black beans. In a small saucepan, heat the beans over medium heat until warmed through. Season with salt and pepper to taste.
- 3
Chop the Vegetables
Dice the tomato and set aside. Prepare any additional toppings such as slicing pickled jalapeños and shredding lettuce if not pre-shredded.
Assembly
- 4
Build the Burrito Bowl
In a large bowl, start with a base of cooked basmati rice. Layer on the warmed black beans, corn, diced tomato, shredded cheese, and shredded lettuce. Add pickled jalapeños, a dollop of creme fraiche, and salsa to taste. Serve with a handful of chips on the side.
