Method

Preparing the Steak

    Season the Steak

    Season the filet mignon with salt and pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Preparing the Pommes Purée

    Cook the Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes.

    Make the Purée

    Drain the potatoes, then mash with butter, heavy cream, and salt until smooth and creamy.

Preparing the Vegetables

    Sauté the Vegetables

    In a separate skillet, sauté the asparagus, carrots, and zucchini in olive oil until tender, about 5-7 minutes.

Preparing the Hunter Sauce

    Cook the Sauce

    In the same skillet used for the steak, add butter, shallots, and mushrooms. Sauté until shallots are translucent. Add red wine and simmer until reduced by half. Add beef stock and thyme, simmer for another 5 minutes.

Plating

    Serve

    Plate the steak, add a side of pommes purée and sautéed seasonal vegetables. Drizzle the hunter sauce over the steak.
